Farmer's Market Tacos

These fresh tacos are bursting with flavor, and are an effort to utilize our farm basket ingredients to their full potential. There's a good balance of textures and flavors in this well-rounded and delicious taco.

-Mixed greens
-Lucky Tiger tomatoes
-Cayenne peppers
-Baby eggplant
-Mild pepper
-Bok choy

For the Farmer's Market Tacos:

A Vegetarian & Cooking! original.

-Six small flour tortillas
-1.5 cups mixed greens
-3 small potatoes
-1 small onion
-1 clove garlic
-1/4 teaspoon cumin
-Salt and pepper
-1 avocado
-2 small tomatoes
-Frozen mango, 12 1" cubes
-1 jalapeno
-1 tablespoon apple cider vinegar
-1 oz gorgonzola cheese
-3 tablespoons sour cream
-1 tablespoon lime juice
-2 French breakfast radishes
-2 Key limes

Mince the onion and begin to cook over medium heat in a large skillet with cooking spray until it begins to brown. Add a splash of oil, then minced garlic followed by small diced, peeled potatoes. Add cumin and a dash of salt and pepper, keep on medium heat for 25-35 minutes, stirring every few minutes.

Dice tomatoes, defrost and small dice the mango, and mince the jalapeno. Combine tomatoes, mango and jalapeno, stir in apple cider vinegar and a pinch of salt.

Stir sour cream, lime juice and a pinch of salt together, and spoon into a plastic bag. Wash, dry and shred mixed greens, peel and slice the avocado. Slice the radishes.

Microwave tortilla stack for about 10 seconds, then assemble: layer mixed greens, crispy potato mixture, and avocado. Drain excess liquid from tomato-mango salsa, add to tacos. Add gorgonzola cheese. Snip a corner of the plastic bag, and pipe lime-sour cream over tacos, top with radishes. Serve with a garnish on the side of halved and seeded Key limes. Enjoy your taco night!
