Apple Sage Chickpea Burgers



With a touch of sweetness, balanced with a hint of smoked paprika, these burgers are a great way to use apples from the fall season. Plus, they hold up well on a bun, and pair nicely with creamy, ripe avocado for a complex and satisfying bite.

Ingredients:
For the Burgers
-1 can chickpeas, drained and rinsed
-1 cup panko breadcrumbs
-1/4 cup almond flour
-1 small onion, quartered
-2 garlic cloves, minced
-3 tablespoons soy sauce
-2 tablespoons apple cider vinegar
-1 tablespoon smoked paprika
-2 teaspoon sage
-1 teaspoon dried thyme
-1 teaspoon black pepper
-1 medium apple, peeled and grated

For Serving
-6 burger buns
-Hot sauce
-Avocado, potato tots

Preheat oven to 400 degrees.

Pulse the onion and garlic in a food processor until minced. Add the chickpeas and resume pulsing to mix. Pour in the breadcrumbs, almond flour, soy sauce, apple cider vinegar, smoked paprika, sage, thyme, black pepper and a pinch of salt. Combine by pulsing the food processor.

Pour the mixture into a large bowl, add the grated apple, and stir to combine. Form six patties and place on a parchment paper-lined baking sheet, that has been sprayed with cooking spray. Bake for 40 minutes, flipping half way through.

Serve on buns, topped with hot sauce, lettuce, and sliced avocado, alongside potato tots or fries.
