Creamy Spinach Tomato Tortellini
This recipe was supposed to include just tortellini (and if you have a full bag of tortellini just make that and don't add the extra pasta). However, I had half a bag of tortellini and half a bag of macaroni so I decided to combine them to make a large meal. Overall, I was pretty happy with the results, this was very easy to put together.

-1/2 bag tortellini (8 oz)
-1/2 box small shaped pasta
-2 teaspoon minced garlic
-1 cup chopped fresh spinach
-1 (14.5 ounce) can petite diced tomatoes
-1/2 teaspoon salt
-1/4 teaspoon pepper
-1 1/2 teaspoons dried basil
-1 teaspoon onion flakes
-2 tablespoons all-purpose flour
-1 1/2 cups half-and-half
-1/4 cup grated Parmesan cheese
|In a large skillet, heat the garlic.|
Add the tomatoes (undrained), chopped spinach, salt, pepper, basil and onion.
Cook and stir until the mixture begins to bubble.
|Combine the flour + half and half in a bowl.|
Pour into the skillet.
Heat for about 5 minutes or until the sauce has thickened.
|Add in the cooked pasta and Parmesan cheese.|
This was really good! The sauce was full of flavor and not difficult to make and I liked that this was made in only a pot (to cook the pasta) and a skillet. The petite-diced tomatoes and spinach added a lot of freshness to the dish. Dave really enjoyed this as well.
