Southwest Quinoa Sliders with Avocado Yogurt Sauce


Dave and I have spent a lot of time this summer hanging-out at the pool. How lucky for us that our friends Steph and Preston have one at their apartment. This is a recipe that we started at home and then took over there to grill and enjoy for lunch. This was a great poolside grilling recipe.

Ingredients:
-2 cups cooked red quinoa
-1/4 cup grated Parmesan
-1/4 cup bread crumbs
-2 tablespoons all-purpose flour
-1 teaspoon cumin
-1 teaspoon garlic powder
-1/2 teaspoon chili powder
-1-2 tablespoons chopped chipotle peppers
-1 tablespoon freshly squeezed lime juice
-2 large eggs
-1/2 cup whole kernel corn
-1/2 cup canned black beans, drained and rinsed
-Kosher salt and freshly ground black pepper, to taste
-Olive oil
-12 split slider buns, toasted, for serving

Avocado Yogurt Sauce
-1 avocado, halved, seeded and peeled
-1/3 cup Greek yogurt
-Kosher salt and freshly ground black pepper, to taste

To make the patties: Combine quinoa, parmesan, bread crumbs, flour, cumin, garlic powder, chili powder, chipotles, lime juice, eggs, corn, black beans and seasoning in a bowl. Make sure to mix it well. Divide into 10-12 equal sized balls, then press into 1/4-inch-thick patties.

To make the avocado yogurt: Smash a ripe avocado to a smooth consistency. Whip into Greek yogurt and then season.

To make these we laid some foil onto a grill, coated the foil in olive oil and grilled these for 3-4 minutes per side.

We also toasted the slider buns.





These were a hit! The slider buns were nice and toasty. The avocado yogurt sauce gave this a fresh element and added nice color to the dish. The patties were perfectly seasoned and the yogurt sauce helped to cool off any spice that was in the sliders. These got rave reviews all around the table and were great for a quick lunch before jumping back into the pool.
