Creamy Spinach Tomato Tortellini


This recipe was supposed to include just tortellini (and if you have a full bag of tortellini just make that and don't add the extra pasta). However, I had half a bag of tortellini and half a bag of macaroni so I decided to combine them to make a large meal. Overall, I was pretty happy with the results, this was very easy to put together.

Ingredients: 
-1/2 bag tortellini (8 oz)
-1/2 box small shaped pasta
-2 teaspoon minced garlic
-1 cup chopped fresh spinach
-1 (14.5 ounce) can petite diced tomatoes
-1/2 teaspoon salt
-1/4 teaspoon pepper
-1 1/2 teaspoons dried basil
-1 teaspoon onion flakes
-2 tablespoons all-purpose flour
-1 1/2 cups half-and-half
-1/4 cup grated Parmesan cheese

In a large skillet, heat the garlic. Add the tomatoes (undrained), chopped spinach, salt, pepper, basil and onion. Cook and stir until the mixture begins to bubble.

Combine the flour + half and half in a bowl. Pour into the skillet. Heat for about 5 minutes or until the sauce has thickened. Add the cooked pasta and the Parmesan cheese.







This was really good! The sauce was full of flavor and not difficult to make and I liked that this was made in only a pot (to cook the pasta) and a skillet. The petite-diced tomatoes and spinach added a lot of freshness to the dish. Dave really enjoyed this as well.
