Fiesta Ravioli
This recipe come from Pearls, Handcuffs, and Happy Hour and is a mixture between Mexican food and Italian food. If you're busy like I am, this is a good dinner because it doesn't have too many ingredients and it's really easy to make.
Ingredients:
-1 pkg. frozen or refrigerated ravioli
-1 {10oz.} can enchilada sauce
-1 {16oz.} jar salsa
-2 cups shredded Colby/Monterrey Jack cheese
-2 cups shredded Colby/Monterrey Jack cheese
-Sliced black olives, optional
Boil a large pot of salted water and cook your ravioli according to package directions.

Meanwhile, heat enchilada sauce and salsa in a pot. |
Once the ravioli is cooked, drain the water. Add in sauce and stir. Add in cheese and stir until melted. |
Serve. |
