Champagne Cupcakes



Happy New Year! I hope that everyone is having a great start to their new year and that everyone had a fabulous New Year's Eve last night. I know that J. and I had a great time and that we've made some resolutions that we will hopefully be able to keep in 2013. 

In the new year there are some changes that will be coming to Vegetarian & Cooking! but those changes aren't coming until half way through January so we'll talk about that later this month.

This recipe is a great way to use any left over champagne you might have from last night, the original recipe called for pink champagne, but I had regular champagne so I used that instead. You can find the original post at CoCo Mi's blog.

Ingredients
-1 box white cake mix
-3 egg whites
-1 1/4 cup pink champagne
-1/3 cup oil
-3 or 4 drops red food coloring

Mix all of the ingredients.

Champagne is the secret ingredient for these cupcakes.
Bake according to the directions on the box.
Meanwhile if desired pipe some melted chocolate onto wax paper.
You want the chocolate to be melted, but not runny.
You can draw your pattern on a piece of paper under the wax paper if you'd like, I found it easier to freehand the design.
Freeze the chocolates to help them become solid more quickly.
Let your cupcakes cool.
Frost your cupcakes and add the chocolate decorations.

These cupcakes were delicious! Even though they were baked there was a faint taste of champagne in them and they were so good. These were a hit with everyone in my house, plus J. These cupcakes are great to make for any special occasion and can be dyed any color.
