Crash Hot Potatoes
This recipe comes from Ree Drummond, The Pioneer Woman. This is a great side dish for any main course, but I think this would go well with Spicy Macaroni and Cheese, a recipe that I also made based on a recipe from the Pioneer Woman.
Ingredients:
-12 whole New Potatoes (or Other Small Round Potatoes)
-Kosher Salt To Taste
-Black Pepper To Taste
-Rosemary (or Other Herbs Of Choice) To Taste (I used thyme instead of rosemary)
Boil the potatoes in a large pot of salted water, until they are fork tender. Spread out on an oiled cookie sheet. |
Mash the potatoes flat using a potato masher, I didn't have one so I tried using this pastry cutter. I ended up just using a fork. |
You don't want to obliterate the potato, but rather just flatten it like a cookie. |
Smashed potatoes. Now brush all of the potatoes with oil. |
Season liberally |
Add a small amount of herb to each potato. Bake for 20-25 minutes at 425. |

This potatoes were great and were a big hit with J. and my dad. Try these out, you will not be disappointed.
