Spinach Lasagna Roll-ups


I love lasagna, but if like me, your New Year's resolution was to be healthier than lasagna really isn't for you. However, this lasagna roll-up is pretty healthy as far as lasagna goes (you can check out the nutritional information over on the original post) so I decided to check it out to see if it would live up to the healthy hype.

Recipe slightly adapted from The Kitchn.

Ingredients:
-8 lasagna noodles 
-2 cups finely chopped frozen spinach
-1 cup low-fat ricotta cheese
-2/3 cup shredded mozzarella cheese
-2 garlic cloves, finely minced
-1/2 teaspoon salt
-Freshly ground black pepper 
-1 cup spaghetti sauce
Cook and drain the lasagna noodles.
Wait until they are cool enough to handle before proceeding.
In a large bowl combine the spinach, ricotta, half of the mozzarella, garlic and seasoning.

Divide the filling between the eight lasagna noodles.
Roll each all the way up and place seam side down in an 8x8 pan.


Top with sauce and the remaining mozzarella cheese.

Bake at 350 for 20-25 minutes.


I was pretty impressed with this recipe. Although it isn't saturated in melty, cheesy goodness, it is incredibly flavorful and the two rolls per serving left me pretty full with the addition of a side dish. Lasagna without the guilt!
