Saag Paneer


This saag paneer is sure to impress, it is complex and hearty and reminiscent of the delicious Indian dish.

Recipe adapted from Food Network.

Ingredients:
-1 t paprika
-1/2 t cayenne
-1 t salt
-8 oz fresh spinach
-1 small onion
-2 cloves garlic
-1 t powdered ginger
-1 small serrano pepper
-1/2 t garam masala
-1 t cumin
-1/2 c plain yogurt

Cut prepared paneer into 1/2 inch pieces. Mix paprika, cayenne, salt, and 1.5 tablespoons oil, gently toss paneer until well coated.

Brown paneer in a saute pan on medium heat, and flip to brown the opposite side, then remove to a paper towel and set aside.


Finely dice the onion and the serrano and begin to saute with ginger, garlic and a tablespoon of oil.


When the onion is caramelized, add the garam masala and cumin. Saute for another few minutes. Roughly chop the spinach and saute with 1/2 c water and additional salt, until spinach is cooked and most of the water has evaporated.


Remove the spinach from heat and mix in the yogurt and the prepared paneer.


Serve atop minute jasmine rice for two.



A serving of naan bread would have made this a perfect Indian dinner, with leftovers for the next day.
