Gnocchi and Tomato Bake
For an easily assembled meal that's quick to prepare, gnocchi and tomato bake delivers on comfortable and delicious Italian notes. Makes a great main course for two, with leftovers.

-16 oz gnocchi
-1 red pepper
-1 clove garlic
-14 oz diced tomatoes
-1/4 t oregano
-1/2 t basil
-1 c cheese, grated or thinly sliced
Chop the onion and red pepper and saute with garlic until soft. Add the diced tomatoes, oregano, salt and pepper to the saute pan, heat to a simmer. Stir in the gnocchi and simmer for 10 minutes. Add the basil. Transfer to an 8x8 baking dish. Cover the gnocchi and tomatoes with shredded or sliced cheese, I used a three cheese blend. Broil until cheese is molten and bubbly.
Served with cheesy garlic bread.
