Fiesta Ravioli


This recipe come from Pearls, Handcuffs, and Happy Hour and is a mixture between Mexican food and Italian food. If you're busy like I am, this is a good dinner because it doesn't have too many ingredients and it's really easy to make.

Ingredients
-1 pkg. frozen or refrigerated ravioli 
-1 {10oz.} can enchilada sauce 
-1 {16oz.} jar salsa
-2 cups shredded Colby/Monterrey Jack cheese
-Sliced black olives, optional

Boil a large pot of salted water and cook your ravioli according to package directions.

Meanwhile, heat enchilada sauce and salsa in a pot.
Once the ravioli is cooked, drain the water.
Add in sauce and stir.
Add in cheese and stir until melted. 
Serve.
This recipe got mixed reviews, I thought it was okay I don't know if I would go out of my way to make it again, but if it was served to me I would eat it again. My dad and J. didn't like the mix of food culture in this dish, J. never likes anything that has to do with Mexican food. On the other hand, my brother loved this recipe, not only did he have multiple helpings at dinner, but he ate all of the leftovers.
