Red Velvet Hot Chocolate with Cream Cheese Whipped Cream


It's 7 degrees where I live today -- a little too cold for my taste. As I was leaving J's apartment this morning he got one face-full of the blustery wind and reminded me to wear gloves, a scarf and a hat to school to day. Mind you that I don't really walk anywhere, just from my car to the law building. I also hate wearing hats with a passion...hopefully I'll survive my trip from point A to point B without one today.

This recipe comes from Une-deux Senses, and is a great alternative to normal hot chocolate. It snows a lot where I live so different hot chocolate recipes are always welcome. Even with the little snow we have today, this is perfect for warming anyone up!

My biggest issue with red velvet recipes is that they never turn out as red as the original blog shows, and I usually put in an excessive amount of food coloring. So it goes.

Ingredients: 
-4 cups whole milk
-1 dash water
-3/4 cup semi-sweet chocolate chips
-1/4 cup sugar
-1 tsp. red food coloring
-1 cup heavy whipping cream
-2 - 4 tbsn. whipped cream cheese, room temperature

Feel free to make your own whipped cream, I always have an iffy time with making whipped cream (I just don't think it tastes good) so I mixed together light whipped topping and whipped cream cheese until combined. I think mixing the cream cheese and the already whipped cream worked great, but you can do whatever.


Slowly heat milk in a saucepan. 
Add a splash of water, the chocolate chips.
When the chocolate is almost melted add the food coloring.
Enjoy in your favorite mug.
Topped with the cream cheese whipped cream.
