Puffins

When I saw this recipe on Pinterest, I really had to make this recipe just based on the name. The name puffin is so cute...pancakes + muffins = puffins. This recipes comes from Bakerella (also an adorable name, some people have all of the luck when it comes to being creative). J. loves pancakes, but can't make them without burning them and I can make pancakes, but I hate standing over the burner. If you're like us, puffins are your breakfast solution.

Ingredients:
-1 cup flour
-1 teaspoon baking powder
-1/2 teaspoon baking soda
-1/4 teaspoon salt
-2 tablespoons sugar
-2/3 cup buttermilk
-1 egg
-2 tablespoons pure maple syrup
-2 tablespoons melted butter
-1/2 cup milk chocolate chips


Mix all of the ingredients together, but reserve some chocolate chips for the tops of the muffins. 
Pour into a lightly greased mini-muffin tin.

This is when you should add the chocolate chips to the top, but I forgot.
Enjoy the puffins with some additional maple syrup.

These were so cute and so good. The problem with foods that are mini is that it is so hard to stop eating them once you start. This recipe will make twenty-four puffins, that was good for four people. Of course you can double or triple the recipe as needed.
