Broccoli Rice Casserole
The idea for this blog comes from Cinnamon Spice and Everything Nice. This was a good dinner, and was also easy to heat up for lunch the next day. I liked this recipe too because I had all of the ingredients on hand already, so it is something easy to put together for a last minute dinner.
Ingredients:
-1 1/2 cups cooked rice
-1 cup cooked broccoli florets-2 tablespoons butter
-2 cloves garlic, minced
-1/4 cup flour
-1 cups milk
-1 teaspoon dijon mustard
-1 1/2 cups cheddar cheese, shredded
-1/3 cup fresh Parmesan cheese, shredded
-salt and pepper, to taste
Preheat the oven to 400.
This was a good combination of rice and cheese, and the broccoli was good to get some vegetables into a meal. This is also really easy to adjust for the number of people you are feeding, a large amount wouldn't take any more work.

Meanwhile, cook the broccoli. |
Cook the rice according to package directions. |
Melt the butter and cook the garlic for about 5 minutes. |
Mix in flour, milk, mustard, salt and pepper. Melt in the Parmesan cheese and one cup of the cheddar cheese, until almost smooth. |
Add in the broccoli and rice. Since you are putting it in the oven, it's ok if not everything is done at the same time. |
In a greased pan, add the mix. |
Top with the rest of the cheddar cheese. |
Bake for 30 minutes. |
