Parmesan Baked Tomatoes
J. may be a picky eater when it comes to vegetables, but I finally found something he enjoys...tomatoes. This recipe is simple and easy to make, it's a great side dish for any dinner. I served it with mac and cheese. The recipe comes from My Kitchen Affair.
Ingredients:
-2 medium tomatoes
-1/3 cup freshly grated Parmesan
-fresh oregano
-salt
-freshly ground pepper
-olive oil
Slice and lay out your tomatoes on a lined baking sheet. |
Brush the tomato slices with oil, add salt and pepper. |
Top with parmesan and oregano. |
Bake at 450 for 10-15 minutes. |
Serve. |
Sorry, about how dark the pictures are! I was using J.'s camera (it's so hard to use a camera that's not your own) and the apartment was so dark because the weather was horrible. On the bright side, this recipe was delicious! These were like a mini pizza with less guilt. The tomatoes were warm and the cheese was gooey. So perfect.
