Hot Chocolate Cookies
It's been so cold this week, so a recipe with hot chocolate in the name seemed perfect. These cookies were really cute with marshmallows and chocolate frosting on top.
This recipe is from Glorious Treats.
Ingredients:
Cookies
-1 stick butter
-12 oz. semi-sweet chocolate
-1 1/2 cups flour
-1/4 cup unsweetened cocoa powder
-1 1/2 teaspoons baking powder
-1/4 teaspoon salt
-1 1/4 cups brown sugar
-3 eggs
-1 1/2 teaspoons vanilla extract
-25 large marshmallows
Icing
-2 cups powdered sugar
-4 tablespoons (1/2 stick) unsalted butter, melted
-1/4 cup unsweetened cocoa powder
-1/4 cup hot water
-1/2 teaspoon vanilla extract
Blend the eggs, brown sugar, and vanilla with a mixer. |
Melt butter and chocolate on half power in the microwave. Mix in with the egg and brown sugar. |
In a separate bowl, mix the flour, cocoa powder, baking powder,and salt. Mix into the chocolate mixture. |
Cover in plastic wrap, and refrigerate for an hour. |
Scoop out onto a cookie sheet with wax paper. Bake for 12 minutes at 325. |
Cut the marshmallows in half and put them on on the cookies. Bake for another few minutes. |
Mix together the ingredients for the frosting. |
Transfer the cookies to a cooling rack. Top with frosting, put wax paper underneath because a lot drips off. |
I really liked these, I thought the frosting was the best part, I couldn't stop eating it, I kept eating the drips that fell off the cookies.In the original, sprinkles were put on top, but I didn't think you could really see them well on the dark frosting so I left them off.
