Blood Orange Salad with Goat Cheese and Pecans


Welcome to the second post of Salad Wednesday 2015. This is a salad that I created on Valentine's Day to accompany our carb filled meal. Blood oranges are my favorite citrus fruit and Dave snagged them at the store for me. All of the other ingredients I already had on hand.

Ingredients:
-Salad mix (mine was a mix of romaine and radicchio)
-1 ounces of goat cheese
-1 blood orange, segmented
-1/4 cup pecans, chopped
-1 tablespoon olive oil
-1/4 cup pomegranate juice
-1/4 cup blood orange juice
-1 teaspoon whole grain mustard

In a small bowl mix together the olive oil, pomegranate juice, blood orange, whole grain mustard to make the vinaigrette for the salad.

Mix together the salad mix, goat cheese and pecans. Toss in the vinaigrette if desired, or serve the vinaigrette on the side.






Dave and I both enjoyed this salad, the goat cheese added a creamy element to the salad, the pecans added an additional crunch alongside the crunchy greens, the blood orange segments were a burst of freshness in the salad. The vinaigrette had good flavor and a nice color due to the pomegranate juice and blood orange juice.
