Irish Cochlanon



This is a recipe that I found on Pinterest during my searches for St. Patrick's Day. According to all of the sources I read cochlanon is a traditional Irish potato dish with kale or cabbage mixed-in. I already had kale on hand, but you can use cabbage as a substitute. Red potatoes can also be used instead of yellow potatoes.

Ingredients
-1 pound kale 
-1 teaspoon salt
-2 pounds yellow potatoes, scrubbed and cubed but not peeled
-2 mediums leeks, split lengthwise and rinsed well
-1 cup whole milk
-1/4 teaspoon nutmeg
-3 cloves garlic, minced
-Salt, to taste

Boil potatoes.

Chop the kale and steam, using minimal water. I did this in the microwave by putting the kale on a plate with a little water and microwaving it in one minute intervals.
Clean and chop the leeks (the green parts are good for stock), put into a saucepan with the milk and simmer until tender.

Drain potatoes and mash. Stir in milk with leeks, cabbage, nutmeg, garlic, and kale. Gently mix to combine all ingredients.



These potatoes were a delicious side dish. I think the kale and leeks added a nice texture to the mashed potatoes (as well as some green). Add a little butter and you'll be good to go.
