Roasted Pepper and Goat Cheese Flatbread
This flatbread is incredibly easy to make and pair well with a salad and a glass of wine. I was drawn to it while searching for recipes, because of it's bright colors. And I was impressed with how the simple ingredients came together to make nice main dish.

Ingredients:
-1 red bell pepper
-1 yellow bell pepper
-1 refrigerated pizza crust
-2 oz goat cheese
-4 oz fresh mozzarella, cubed or shredded
-1/4 c fresh basil, chopped, divided
Brush the peppers with olive oil and broil until blackened on all sides. Put into paper bag and seal to steam (this will make the skin easier to peel off.) Peel of the skin, remove the stem and seeds. Slice the peppers into strips. Spread out the pizza crust onto a prepared baking sheet and add the basil directly on top of the crust. Top with mozzarella, goat cheese and roasted peppers.

We both really enjoyed this flatbread. The basil helped to add flavor to the crust, the goat cheese and mozzarella paired nicely together, while the roasted peppers added a fresh and colorful element. We only had one piece left over from the eight pieces we made.
