Vegetable Pizza Taquitos
A few weeks ago we made vegetarian taquitos and I thought it would be fun to try making taquitos with pizza fillings, rather than black beans and cheese. I chose some of my favorite pizza toppings, but you can use whatever pizza toppings you'd like. Try to keep the proportions roughly the same, these proportions will fill all twelve tortilla shells.

-1/2 cup roasted red pepper, diced
-1/4 cup kalamata olives, diced
-1/4 cup green onions, sliced
-1/4 cup green onions, sliced
-1 cup shredded mozzarella
-1 teaspoon basil
-1/4 teaspoon garlic powder
-1/2 teaspoon salt
-12 corn tortillas

In a medium bowl mix the red peppers, olives, onion, mozzarella and seasonings.
Heat the tortillas, add two tablespoons of filling to the side of the tortilla closest to you, then roll up tightly. Place seam side down on a baking sheet. Repeat until all of the filling is gone.
Spray the tops of the taquitos with cooking spray and bake at 400 degrees for 20-25 minutes.
These got mixed reviews. Maybe I would have liked them better with marinara sauce inside of the taquitos, I liked all of toppings individually and on pizza, but in this recipe they didn't click for me. Maybe they we disproportional? There might have been too much olive. Dave enjoyed the leftovers and didn't have any problems with the recipe.
