Grilled Artichokes



I'm always looking for interesting grilling recipes to try. I've only made artichokes one other time, so I thought this would at least prove to be a challenge and it did. I relied on this article from Serious Eats, so that I could make my way through cleaning the artichoke prior to cooking it -- use the second set of instructions

Ingredients:
-Two artichokes, trimmed and quartered
-Cooking spray
-Parmesan cheese
-Salt and pepper

First, trim and quarter the artichokes. If you already know how, great, if not, use the link I provided above, that's what I used to get everything prepped. Boil the artichokes until tender.

Drain the boiling water and let the artichokes cool, spray lightly with cooking spray, sprinkle with parmesan cheese and season with salt and pepper.



Grill for 7-10 minutes on each side or until the cheese is golden brown. I put my artichokes on a vegetable pan to keep them from falling through the grates.



It's been a while since Dave or I have had artichokes. I thought they were pretty good. Dave thought this was good, they were cooked well and the parmesan helped to flavor the artichokes. Overall, I consider these to be a successful grilling side dish.
