Roasted Cauliflower Steaks with Lemon Relish

 
I thought this dish looked incredibly interesting, I've used "cauliflower steaks" in a few recipes before. I was unable to find Meyer lemons at the grocery store (among other differences, Meyer lemons are sweeter than regular lemons), but substituted regular lemons successfully. This recipe isn't hearty enough for a dinner without some additional sides, but it made for a good light lunch.

Recipe from Brooklyn Supper

Ingredients:
roasted cauliflower
-2 tablespoons olive oil
-1 large-ish head of cauliflower
-1/2 teaspoon sea salt
-ground black pepper to taste
-1 lemon, sliced into 1/4-inch rounds

lemon relish
-1 lemon, minced (peel and all, use organic lemons!)
-1/4 cup minced parsley
-2 tablespoons minced shallot
-2 tablespoons extra virgin olive oil
-1 tablespoon rice wine vinegar
-1/2 teaspoon sea salt
-1/4 teaspoon red pepper flakes

Preheat oven to 450 degrees. Trim the very base of the cauliflower, leaving stem intact. Trim any leaves as well. Using a long, sharp chef’s knife, cut cauliflower into 1/2 inch thick slices. We were able to get two nice sized "steaks" out of the head of cauliflower, then we used the leftover florets for another recipe.

Drizzle a rimmed baking sheet with olive oil. Set cauliflower slices in oil, and carefully turn to coat. Sprinkle each side with sea salt and pepper. Layer the lemon slices on top. Roast for 20 minutes. Use a large spatula to turn cauliflower steaks, and then roast for another 10 - 15 minutes, or until cauliflower is tender and edges have browned nicely.

Meanwhile, make lemon relish by using a fork to combine all of the ingredients in a small bowl. Top warm cauliflower with relish, and serve.


     



The flavor that cauliflower takes on when roasted pairs nicely with the tartness of the lemon. I didn't find the acidity from the lemons to be overbearing in this dish, I think the other ingredients in the relish help to mellow it out and prevent the lemons from taking over. This would be a lovely dinner served along side a salad and some French bread.
