Red Velvet Rice Crispy Treats


I first made these red velvet rice crispy treats about two years ago as a gift for Dave right before we started dating. He loved them, but some how they never made it onto the blog. These are so easy to make, but adding the red velvet cake mix helps give them a wow factor for Valentine's Day.

Recipe from Your Cup of Cake.

Ingredients:

-6 cups rice crispy cereal
-1 bag mini marshmallows (about 10.5 oz.)
-3 tablespoons butter
-1 teaspoons vanilla extract
-1/3-1/2 C. dry Red Velvet cake mix 
-Heart cookie cutter and melted white chocolate for decoration

In a large pot add the 3 tablespoons of butter and heat until melted. Swirl around the pot so that the entire inside is coated. Add the marshmallows and the vanilla and heat until the marshmallows have melted.

Remove from the heat and stir in the rice crispy cereal and red velvet cake mix until the cereal is well coated in marshmallow and red velvet cake mix.

On a small square of parchment paper, place the greased heart shaped cookie cutter (don't forget to butter your hands too) and press small amounts of the cereal mixture into the cookie cutter until you've formed enough heart shapes to us all of the cereal mixture.

I drizzled my rice crispy treats with a little bit of white chocolate, but you can leave them plain if you'd like.







I brought this batch of rice crispy treats to my office on Friday and everyone seemed to like them. It doesn't hurt that it's so easy to make a large batch of them. Happy Valentine's Day!
