Italian Style Stuffed Peppers


I've had this recipe for so long that I don't even know where I got it from, but this is my tried and true stuffed pepper recipe which is sure to be a hit...unless your boyfriend hates vegetables like mine. This is not J's favorite recipe, but only because of the bell peppers. His roommate T. does like stuffed peppers though so whenever I make this I have help eating it.

You can add any mix-ins that you want into the rice, I had some leftover green onions so I sliced them and tossed them in with the sauce and seasoning.

Ingredients:
-2 green bell peppers
-2 cups cooked rice
-1 cup tomato sauce
-1 TBS Italian seasoning
-Mozzarella cheese

Cut the bell peppers in half and remove the seeds.

Steam the pepper halves in a covered saucepan of boiling water.
This takes 18-20 minutes. 
Once the peppers are almost steamed, add 1/2 cup of tomato sauce  to your cooked rice.
Also, add the Italian seasoning.
Remove the pepper halves from the water and place them opening side up in an 8x8  pan.
Stuff with rice.
Top with the remaining sauce and cheese. 
Bake for 20 minutes at 350.

I think this stuffed pepper recipe is great because you have most of the ingredients on hand in your kitchen already. The bell peppers are a nice compliment to the Italian flavors. This recipe is also great because you can customize it however you'd like, you can change the filling ingredients or even the type of pepper you use. This recipe is also easily doubled or tripled.
