Olive Oil, Garlic, Chive and Parmesan Mashed Cauliflower


I was really surprised at how well this recipe worked. I love the combination of flavors and the mashed cauliflower takes a lot of the carbs and guilt that people associate with mashed potatoes. Four of us thought that these were no different than mashed potatoes, we didn't tell my brother that they were cauliflower. He knew that weren't mashed potatoes, but he couldn't tell how they were made.

Ingredients: 
-1 head of cauliflower, chopped and boil
-6 cups water (to boil the cauliflower)
-1 teaspoon salt (to add in boiling water)
-4 cloves garlic, minced
-1/4 cup extra virgin olive oil
-1/2 cup milk
-1/3 cup grated Parmesan cheese
-1 teaspoon fresh cracked black pepper
-2 tablespoons chopped chives
-salt, to taste

These were well flavored and I didn't miss the potatoes at all. The leftovers reheated great for lunch at work the next day. This is a recipe and a technique that I will use often.
