Roasted Red Pepper Crostini
Today is the second day of our Valentine's Day recipes, we really wanted to focus on romantic recipes that would make a great dinner, but would also be more special than a typical night at home. This recipe is a nice crostini appetizer with a little chocolate incorporated to give it some sweetness.

Ingredients:
-1 baguette, sliced into rounds and toasted
-1 jar of roasted red peppers*
-1 cup fontina cheese, cubed
-1/4 cup white wine
-Salt and pepper
-Shaved white chocolate
If you want to use fresh pepper, use about two small peppers. For instructions on roasting them, check out this blog post.
Cube the fontina cheese. |
Drain the roasted red peppers and add the fontina, roasted red peppers, white wine and seasoning into a food processor. |
Spoon onto the toasted baguette slices. |
Ready for a little something extra. |
Top with a little shaved white chocolate for a hint of sweetness. |

I love this recipe for several reasons. First, because it is so easy to put together. If I'm preparing a Valentine's Day dinner after class I want the appetizer to be easy so that we can snack a little and open a bottle of wine or champagne while dinner cooks. Second, look at the color of this appetizer! So gorgeous for Valentine's Day. Third, chocolate, chocolate, chocolate.
A note about the chocolate, make sure not to be heavy handed or you will end up with a very sweet appetizer course.
