Zucchini Spaghetti with Creamy Lemon Sauce


I wanted to try something different as a side dish, I've seen a lot of vegetable spaghetti side dishes, and I really like zucchini so this was a good one to try. The sauce was really thick, and I think it brought out the flavors of the zucchini, it almost had a garlicky type flavor, but I didn't add any garlic. All the other ingredients were in small amounts so it was a pretty light side as well.

Ingredients:
-1 medium zucchini
-1 tablespoon freshly squeezed lemon juice
-1/2 cup light cream
-1 Tablespoon cup freshly minced chives
-salt


Mix all the dressing ingredients.
Cut up the zucchini, I used the food processor.
Sprinkle the zucchini with salt and let some water drain out.

Top with dressing.
I made some of the zucchini slices by just running the zucchini through the food processor and getting small matchstick like pieces. I tried some making longer more spaghetti like pieces using a peeler too. The smaller pieces were easier to make, and I think they were easier to eat too, I would do all of it that way again.
