Bacon Deviled Eggs with Caramelized Onions and Cheddar


Today is the Super Bowl and although I don't really enjoy football...I do enjoy food and a Super Bowl party is a great place for appetizers. This recipe is very easy and can be made the morning of the party, the eggs can even be hard boiled a few days prior to the party to help cut down on prep time.

Ingredients: 
-6 hardboiled eggs, peeled and cut in half lengthwise
-4 slices of vegan bacon, cooked crispy
-¼ cup onions, finely minced
-Dash of balsamic vinegar
-1½ tablespoons Miracle Whip
-A small handful grated cheddar cheese
-Salt and pepper to taste
-Paprika

To make the hard boiled eggs, place six eggs into a pot and cover them with water. On medium-heat bring the water to a boil. Remove from the heat immediately, cover the pot, and set a timer for twenty minutes. After twenty minutes pour out the hot water and cover the eggs in cold water. After about ten minutes, dump that water out (the eggs will have heated it up) and add more cold water as well as ice if you want to help cool down the eggs.

After you cook the vegan bacon, set it to the side. Heat some oil in the same small skillet and cook the onions until browned. Pour in the dash of balsamic vinegar and cook until absorbed into the onions. (The balsamic vinegar step is optional, but I like to add it because it adds a really great depth of flavor to the caramelized onions.
Remove the yolks from the eggs and add all other ingredients into a bowl. Mix together.
My mixture was a little dry, I added another tablespoon and a half of mayonaise.

Once the mixture is sufficiently combined, spoon into the eggs. 

Top with paprika. 

I really enjoyed this appetizer recipe. The flavor of the vegan bacon, cheddar cheese and caramelized onions were perfect in this! The smoky paprika added another depth of flavor and some color to the eggs.
