Watercress Pesto Crostinis
This was one of the delicious and flavorful foods that I had while in England. This appetizer, or starter as they say in England, is a great addition to any meal.
Ingredients:
-2 oz watercress
-1 clove garlic
-2 tablespoons pine nuts
-olive oil
-grated Parmesan
-bread (you will need to make bite sized crostinis so choose a thinner bread loaf)
Slice the bread and toast in the oven. |

Add all ingredients except for parmesean into a blender or food processor and blend. The watercress goes in stems and leaves. |
Spread onto toast pieces and add paremsean on top. |
This is such a simple and easy appetizer to make before a party or a multiple course dinner. The watercress gives the pesto a really fresh flavor, it's not as overwhelming of a flavor like basil can be in traditional pesto.
