General Tso's Tofu Sub

As I mentioned last Wednesday, I've always found vegetarian sandwiches to be a bit of a struggle. They can be full of flavor, but sometimes it just feels like something is missing. Or the veggies look great, but the sandwich is really lacking a sauce to tie all of the flavors together. I had this sub pinned on my Pinterest Board (to check out my boards, click the Follow Me tab above) because I thought it would be a great way to get quite a bit of protein in a sandwich.

Inspired by the New York Times.

-General Tso's sauce
-Vegetable oil, for frying
-1 1/2 teaspoons sugar
-1/4 teaspoon paprika
-1/4 teaspoon garlic powder
-1/4 teaspoon onion powder
-Salt, to taste
-8 ounces firm tofu, drained and cut into 4 slices
-3 large egg whites
-3 tablespoons cornstarch
-1/2 cup panko bread crumbs

Yum Yum Sauce
-1 Cup Mayonnaise
-1/4 Cup Water
-1 tsp Tomato Paste
-1 tbsp Melted Butter
-1/2 tsp Garlic Powder
-1 tsp Sugar
-1/4 teaspoon Paprika
-1 dash Cayenne Pepper

For assembly:
-Two subway (submarine) sandwich rolls
-Diced dill pickles

In a bowl mix together all ingredients for the Yum Yum sauce until combined.

Dip the tofu slices into cornstarch, then egg, then breadcrumbs mixed with the seasoning (sugar, garlic powder, onion powder, salt, paprika).

Pan fry the tofu until golden brown on each side. Drain on a paper towel covered plate.

To serve: Brush both sides of the tofu with General Tso's sauce. Spread Yum Yum sauce onto the top bun, add the pickles and close.

This was a good sandwich, the big piece of tofu added a good amount of protein, making this good for lunch or dinner because it was pretty filling. I like to use store bought General Tso's because it really cuts down on the fresh ingredients that you need to purchase -- you can find General Tso's in the Asian food section of most large grocery stores. I used the Yum Yum instead of regular mayo because it has much more flavor and the ingredients are probably something you already have on hand.
