Brie + Brussels


We ended up with half a wheel of brie after using half in another recipe. Dave and I both really enjoy brie cheese and it melts perfectly between two slices of bread. Add a little bit of sauteed brussels sprouts and you've got quite the sandwich.

A Vegetarian & Cooking original.

Ingredients:
-4 slices whole wheat bread
-4 ounces of brie
-Whole grain mustard
-1 cup brussels sprouts, shredded
-Salt and pepper
-Cooking spray

In a small skillet heat the cooking spray and add the shredded brussels sprouts to the pan. Cooking the brussels, stirring frequently, until they are tender and some pieces are starting to become crispy. Season with salt and pepper and set aside.

Smear a thin layer of multi-grain mustard onto the inside of two pieces of bread add 2 ounces of brie to each sandwich, along with a hefty serving of shredded brussels. Butter the outside of the sandwiches and cook in a hot skillet until golden brown on each side with melted cheese.





This sandwich was pretty simple, but the ingredients paired together really nicely. Brie is a mild cheese, but with distinct flavor, it can really hold its own against the brussels sprouts. I love adding mustard to my grilled cheese sandwiches, but you can leave that ingredient off if you'd like to keep this extra simple. The brussels and brie don't need too many other ingredients to make this a great grilled cheese.
