Skinny Blackberry Margaritas


Happy Cinco de Mayo!!  I wanted to make a margarita, however, I didn't want to make something with too many calories. I like to be able to enjoy both my dinner and my drink -- not feel guilty about one or the other.

According to my calculations on My Fitness Pal there is 86 calories per 1/2 cup serving (that's not including the rim).

Recipe from Dinner, Dishes and Dessert.

Ingredients:

-1/2 cup water
-1/4 cup sugar
-6 oz frozen black berries
-1/2 cup tequila
-1/3 cup fresh orange juice
-1/3 cup fresh lime juice

Rim of the glass
1 lime
3 tablespoons sugar

To create the simple syrup heat the water until boiling, stir in the sugar until fully dissolved. Remove from heat, and let cool.

In a blender combine the simple syrup, tequila, black berries, lime juice and orange juice. Blend until smooth. We don't own a mesh strainer so ours still had the seeds in them, which is fine, but if you'd like to strain this through a fine mesh strainer that would make it smoother.

To rim the glass with sugar, wet the edge of the glass with lime juice and then swirl the cup rim down on a plate of sugar.



These turned out so cute for Cinco de Mayo. Dave and I turned our batch into two margaritas (rather than trying to split it into four small servings). Overall we were happy with how this turned out. It wasn't as sweet as it could have been (like some of the margaritas that you get at restaurants), but I was happy to have fewer calories over a saccharine sweet drink.
