Breakfast Pizza


This recipe is the perfect weeknight dinner. J declared this the easiest blog that I've ever made. You can find the original here.

Ingredients:
-1 homemade or store-bought pizza dough
-1 cup grated Parmesan
-1 cups grated mozzarella
-3-4 eggs
-Green peppers, other additional toppings
-salt and pepper
-2 tablespoons minced chives
-olive oil, for brushing


We used a prepared crust, but you can use whatever kind you like.
Top with mozzarella and parmesan cheese.
Add peppers and other toppings.
Crack as many eggs as desired onto the pizza.
Brush exposed crust with olive oil.
Bake.
The original post suggested 8-10 minutes at 500.
We cooked ours for about 18 minutes at 425. 
Top with chives.  
Slice and serve.


This got mixed reviews between J and I. He didn't love it and wished that it had some sort of a sauce, I really, really liked it. This was so easy to make and I thought the flavors blended well together. This would have been really good with garlic butter sauce. I think this is going to become standard in our weekly dinner rotation because it was incredibly easy to make and the ingredients weren't expensive.
