Coconut Crusted French Toast


I have had this recipe on my Pinterest board for a long time and I finally got around to making it for brunch. I love sweet breakfasts, but this would be better served for brunch. Pour some mimosas and enjoy a lazy Sunday morning putting together this recipe.

Ingredients:
-8 slices of wheat bread
-1 c milk
-3 eggs
-1/2 t. cinnamon
-1 t. vanilla extract
-coconut
-strawberries
-maple syrup
Mix together milk, eggs, cinnamon and vanilla extract.
Place the coconut on a plate.  

Soak the bread in the milk/egg mixture.
Dip the bread in the shredded coconut. 

Cook until golden brown in a skillet of melted butter. 

Serve with strawberries. 

Or maple syrup. 



We served this with strawberries (macerated the strawberries in a little sugar first) and maple syrup. I liked it best with the maple syrup, Dave ate his with strawberries, both are good. It was a little difficult to keep all of the shredded coconut on the French toast pieces. Clean out the skillet in between batches to make sure that there aren't any burnt pieces of coconut.
