Buffalo Mushroom Quesadillas



I had intended to make a different recipe when I started buying the ingredients. But the grocery store was out of one ingredient I needed and these mushrooms were on sale. These quesadillas are full of flavor. Mushrooms and buffalo sauce are a perfect pairing and the duo of cheeses melted together beautifully.

Ingredients:  (Makes 2 quesadillas)
-Four tortillas
-Three tablespoons butter
-5 button mushrooms
-4 tablespoons buffalo sauce
-1/4 cup honey goat cheese
-1 cup mozzarella
-Salt and pepper


In a sauce pan, melt the butter.
Add the mushrooms and seasoning, saute until the mushrooms are cooked through.

Drain the excess liquid from the mushrooms if necessary.
Add an additional tablespoon of butter (if desired), buffalo sauce and seasoning.
Saute for about a minute. 

Split the goat cheese between two tortillas.
Top with mozzarella, the mushrooms, more mozzarella and then a plain tortilla.
Repeat with the second tortilla.
Cook in a pan coated in hot oil until golden brown. 

Serve with additional buffalo sauce.




 I was really happy with how this turned out. The mushrooms are a good vehicle for the buffalo sauce and the mushrooms also help to add texture to the quesadilla. The buffalo sauce was not overwhelming. The sweetness of the honey goat cheese helped to cut through some of the heat, giving it the right amount of heat and flavor.
