Buffalo Mushroom Quesadillas
I had intended to make a different recipe when I started buying the ingredients. But the grocery store was out of one ingredient I needed and these mushrooms were on sale. These quesadillas are full of flavor. Mushrooms and buffalo sauce are a perfect pairing and the duo of cheeses melted together beautifully.

Ingredients: (Makes 2 quesadillas)
-Four tortillas
-Three tablespoons butter
-5 button mushrooms
-4 tablespoons buffalo sauce
-1/4 cup honey goat cheese
-1 cup mozzarella
-Salt and pepper
In a sauce pan, melt the butter. Add the mushrooms and seasoning, saute until the mushrooms are cooked through. |
Drain the excess liquid from the mushrooms if necessary. Add an additional tablespoon of butter (if desired), buffalo sauce and seasoning. Saute for about a minute. |
Serve with additional buffalo sauce. |
