Greek Yogurt Waldorf Salad
It's Salad Wednesday again, so far we've been choosing some non-traditional salad options. There will be some salads with leafy greens in the future!
Dave and I made this salad for brunch on a Sunday, it could easily be a starter for dinner or a breakfast/brunch dish.

Ingredients:
-½ cup 0% fat plain greek yogurt
-2 tsp honey
-1 tsp vanilla extract
-2 medium jazz apples, diced
-1 medium ambrosia apple, diced
-¼ cup chopped walnuts
-¼ cup craisins
Mix together the Greek yogurt, honey, vanilla extract and diced apples. Stir in the walnuts and craisins, reserving some for the top. |
Serve over additional apple slices. |
And top with the reserved walnuts and crasins. |
I have never had a traditional Waldorf salad before, but I thought this version was excellent. The yogurt was sweetened by the honey and vanilla, the apples added a nice juicy bite, the walnuts added crunch and the craisins added a slightly tart flavor. As I mentioned previously, this is a really good light breakfast dish or a side dish for brunch.
