Spinach and Swiss Gratin
This was the Thanksgiving side dish that Dave and I brought to my parent's house. We were a little unsure of what to bring, but Dave's my sent us a great list of recipes. This spinach and swiss gratin stood out of us as something everyone would like and a good complement to the meal.

Ingredients:
-1 tablespoon butter
-1 tablespoon butter
-l/2 large onion, chopped
-3/4 tablespoon flour
-3/4 cup milk
-1/2 cup cheese, shredded
-2 (10oz) packages frozen, chopped spinach, thawed and squeezed dry
-panko breadcrumbs
-Parm cheese
Preheat oven to 400. Butter an 8x8 pan. In a small saucepan saute the onion in butter, add flour and cook, stirring for about one minute. Next, whisk in the milk. Bring to a boil, reduce the heat and cook until thickened.
In the 8x8, add the spinach and pour the sauce from the small saucepan over it. Stir to combine. Top with panko, shredded cheese and parm cheese.
Bake 25 min.
This dish went over well. The spinach had a good flavor, the panko bread crumbs added a little crunch. Melted cheese is always great. This is a side dish we will be making again.
