Grilled Brie with Mustard and Chives



If making thirty grilled cheese for this month has taught me anything, it has taught me that brie is my favorite cheese. It is creamy, has a nice subtle flavor and melts like a dream. If you want to prepare a perfectly melted, cheese dripping, grilled cheese then you will need to use brie.

This recipe is from Framed Cooks.

Ingredients:
-4 slices Italian bread
-2 tablespoons soft butter
-6 slices Brie cheese
-2 tablespoons grainy mustard
-1 tablespoon chopped fresh chives

Gather the ingredients.
The star of the show.

Spread both bread slices with the whole grain mustard.

Butter the other side of a slice and lay it butter side down in a hot skillet.
Layer the brie cheese and chives on top.
Top with the other bread slice.

More butter.

Cook until golden brown with melted cheese.

Slice and serve warm.

Isn't it divine? 
I enjoyed everything about this sandwich, mustard is my favorite condiment so I was very happy with the use of that. The chives added nice color and a little extra flavor. The mildness of the brie went well with both of those. The bread toasted nicely and got pretty crisp on the outside. This would have been fantastic served with a bowl of tomato soup.
