Wine Grilled Cheese


This grilled cheese recipe really intrigued me, because I wasn't sure how the red wine reduction was going to taste. Now that I know, I'm not sure what three ingredients go better together than wine + cheese + bread -- that's a happy relationship. 

Recipe from BS in the Kitchen

Ingredients
-2 slices french bread
-1-2 tbsp butter
-½ red onion (chopped)
-1 clove garlic (minced)
-Dash of rosemary
-Dash of thyme
-1 tbsp flour
-¾ cup red wine 
-½ cup shredded Gruyere cheese
Melt the butter in a skillet.
Add in the onion and saute until the onions begin to soften.
Add in the garlic, thyme and rosemary, saute for a few minutes.
Sprinkle in the flour, mix well.
Add in the wine.
Reduce the wine.

Until it is thick enough to coat a spoon. 

Pour the wine reduction onto two bread slices

Perfection. 

Top with gruyere cheese.
Top with the other slice of bread.
Butter each outside piece and cook in a skillet until crispy.

Serve immediately. 


I really enjoyed this sandwich, the wine reduction reminded me of balsamic reduction. I really like dark, vinegary flavors like balsamic reduction, so I think that was why I enjoyed the sandwich so much. I would have been happy to just dip bread into the wine reduction. The rosemary flavor came through and the onion wasn't overpowering. I would make this sandwich again.
