Raspberry, Mint and Mozzarella Grilled Cheese
When I first started this blog I made a recipe that was a smashed blueberry and basil sandwich which was delicious. I would have never thought to put berries on a grilled cheese sandwich, but the sweet/tart flavor of the berries paired nicely with the herbs. That sandwich inspired this sandwich -- I used a berry and herb combination which goes well together.

Ingredients:
-Pumpernickel bread
-Mozzarella cheese
-Raspberries, smashed
-Mint, shredded
-Butter

To build the sandwich -- layer mozzarella and the crushed raspberries. |
Add mint. |
And more cheese. Top with another slice of bread. Melt butter in a skillet and cook until crispy on the outside. |
This grilled cheese got mixed reviews. My dad hated that there was fruit on the sandwich, I thought that it was a nice touch. The raspberry added color and the tart/sweet flavor went well with the mint. The mint also added some nice color, this was not a boring sandwich. I'm not a huge fan of mint, but if you really like mint you should add more to your grilled cheese because this one didn't have too strong of a flavor.
