Valentine's Day Caprese

The side dish for the Valentine's Day meal is this beautiful caprese salad. This is a traditional caprese with a heart twist.

The ingredients are for one large salad. Dave and I split this salad, but you could make multiple salads by increasing the ingredients.

-1 tomato, thinly sliced
-7 ounces of mozzarella cheese
-6 leaves of basil
-Sea salt
-1 tablespoon olive oil
-1 tablespoon balsamic vinegar

You will also need 1 heart shaped cookie cutter.

Slice your mozzarella into 1/4 inch thick slices. I was able to get 2 heart pieces out of each slice, play around with angles to see how many hearts you can get from each slice (this will depend on the size of the slices as well as the size of your cookie cutter). ***Make sure to save your mozzarella scraps, their great for melting in other recipes.

Once you have enough mozzarella hearts, layer them with the tomato and basil. Top with sea salt, then drizzle the olive oil and balsamic vinegar over top.

This looked great! It's really no different than a traditional caprese salad, so the classic flavor combination is still there, but taking the time to cut the mozzarella into hearts really helps to tie this into the holiday.
