King Cake Cupcakes


It's Mardi Gras! I took the easy way out this year in making these King Cake Cupcakes (I'm not a great baker and using 20+ ingredients to make a dessert overwhelms me). This easy recipe will allow you to enjoy a King Cake-esque dessert at home, without too much work.

NOLA King Cakes are topped with purple, gold and green sugar to symbolize justice, power and faith.

Ingredients:
-1 box yellow cake mix (water, vegetable oil and eggs called for on cake mix box)
-Cream Cheese Frosting
-1/4 teaspoon almond extract
-Purple, green and yellow sugar**

If you don't want to buy these, you can create your own using food coloring + a little sugar. I did this to create my three colors. 

Make the cupcakes according to package directions. Once cooled in a bowl mix together the cream cheese frosting and almond extract. I only used about half a container of cream cheese frosting, I guess I wasn't too generous with frosting the cupcakes.

Top each with the purple, gold and green sugar. 



These are kid approved! My best friend's daughter declared that she thought the cupcakes were good. The almond flavor is pretty light, but there is enough to pick-up that flavor. I thought these were a nice way to enjoy a little Mardi Gras in Ohio.
