Cucumber "Pasta" Salad


I made this salad as a side dish for one of our recent game nights. In an effort to support one of our friends on her low-carb diet we've been searching for some low carb recipes recently to serve whenever she comes over for dinner. This side dish was incredibly easy to make and featured several fresh ingredients.

Ingredients
Pasta Salad
2 cucumbers, cut into noodles
1 cup tomatoes, chopped
1 clove garlic, minced
½ cup olives
Dressing
1 tablespoon basil, chopped
1 tablespoon oregano, chopped
2 tablespoon balsamic vinegar
½ tablespoon black pepper
½ tablespoon sea salt

Use a vegetable peeler to make noodles out of the cucumber. If you feel the pieces are too thick, then use a sharp knife to cut each noodle into two pieces (I did this for thinner "pasta). You will have leftover cucumber pieces, you can discard these or save them for a snack.
In medium bowl toss pasta with tomatoes, garlic, and olives. In a small bowl, whisk together basil, oregano, balsamic vinegar, pepper and salt. Pour dressing onto "pasta" salad and toss to combine.


This was really tasty! The cucumber noodles were fun and a nice alternative to a carb filled side dish. The dressing gave this "pasta" salad good flavor and the freshness of the zucchini and tomatoes were a welcome sight in the winter.
