Buffalo Chickpea Tacos with Homemade Ranch Sauce
I've had this recipe on my "to try" Pinterest board for a while. It's a healthier version of the taco, but it's also a more fun way to eat buffalo-fill-in-the-blank-salad. Coating foods in buffalo sauce has been popular for a while now and the spiciness of the buffalo sauce adds a nice heat to traditional salad.
-2 cups chickpeas
-1 tablespoon olive oil
-1/4 cup buffalo sauce
-Romaine Lettuce
-Green Onion

Ranch Sauce
-1/4 cup sour cream
-2 tablespoons ranch seasoning
In a small bowl combine the sour cream and ranch seasoning. Set aside.
In a skillet heat the olive oil and saute the chickpeas until golden. Remove from the heat and coat the chickpeas with the buffalo sauce.
Spoon a generous amount of chickpeas into each romaine lettuce leaf. Drizzle with ranch sauce and top with chopped green onions.
