Vegetarian Baked Taquitos


Sometimes there is nothing more comforting than making a simple, but filling dinner. These taquitos are crunchy and chewy all at the same time. I served them with salsa, guacamole would be good too.

Ingredients
-1/2 cup cooked black beans
-1/2 cup frozen corn kernels, defrosted
-1 cup shredded cheddar cheese
-1 teaspoon ground cumin
-1/4 teaspoon garlic powder
-1/2 teaspoon salt
-12 corn tortillas

Combine the beans, corn, cheese, cumin, garlic powder, and salt in a bowl.

Take one tortilla at a tome and place 2 tablespoons of the mixture on the side closest to you and roll it up.Place four corn tortillas at a time in between two sheets of damp paper towel and microwave for 20-30 seconds to loosen (this prevents the tortillas from cracking when they are rolled).
Place the taquitos seam-side down on a foil-lined cookie sheet, spray the tops lightly with cooking spray and bake for 25 minutes at 400 degrees. 





 These were so easy to make and incredibly wonderful. Dave and I both enjoyed snacking on them for dinner served with a side of soup. This is something I would happily make again with additional vegetables.
