Honey Lime Sweet Potato Black Bean and Corn Tacos


We're coming up on the three year blogiversary soon and my friend Kayla joined Dave and I at my parents house to whip up a few recipes in celebration of the occasion. This recipe was recommended to me by a friend and the resulting tacos were delicious.

Ingredients
-1 1/2 lbs sweet potatoes, peeled if desired and diced into 1/2-inch cubes
-4 tablespoons olive oil, divided
-1 teaspoon cumin
-1 teaspoon paprika
-1/4 teaspoon ground coriander
-1/8 - 1/4 teaspoon cayenne pepper
-Salt and freshly ground black pepper
-1 small yellow onion, diced (1 cup)
-1 clove garlic, minced
-1 (14.5) oz can black beans, rinsed and drained
-1 cup frozen yellow corn, thawed and drained
-3 tablespoon honey
-3 tablespoon fresh lime juice
-Corn tortillas
-Diced avocados and feta cheese (optional)



Preheat oven to 425 degrees. Line a baking sheet with foil then place sweet potatoes on foil. Drizzle with 3 Tbsp olive oil and toss to evenly coat. Sprinkle with the cumin, paprika, coriander, cayenne pepper and season lightly with salt and pepper to taste then toss one more time to evenly coat with the seasoning. Bake for 15 - 20 minutes until tender (make sure to remove them from oven and toss once halfway through baking to ensure that they cook evenly).

Once the potatoes are done heat the remaining one tablespoon of olive oil in a large skillet, over medium-high heat. Add onion and saute until caramelized, about 5 - 6 minutes, adding in garlic during last 30 seconds of sauteing.

Reduce the heat and add in the sweet potatoes. 

Then add in drained black beans, corn, honey and lime juice. Heat until warmed through. 

Serve over warm tortillas with feta cheese and avocado. 







These tacos were delightful. The honey added a nice sweetness, while the lime juice helped to keep the filing a little tangy. The avocado added a buttery element, while the feta cheese added a little salt. We were all happy with how these turned out (they got taste tested by six people). The colors were wonderful as well, eating colorful foods makes me happy.
