Cajun Spiced Broccoli
Here's another recipe to get you pumped up for Mardi Gras. This cajun spiced broccoli brings wonderful flavor to broccoli and pairs well with yesterday's post Mini Vegetarian Muffalettas.

Ingredients:
1 bunch broccoli, cut into florets
2 tablespoons canola oil
2 large garlic cloves, minced
3/4 teaspoon Creole seasoning*
*The following spices may be substituted for 1 teaspoon Creole seasoning: 1/4 teaspoon each salt, garlic powder and paprika; and a pinch each of dried thyme, ground cumin and cayenne pepper.

In a large nonstick skillet heat the oil. Then saute broccoli until crisp-tender, adding the garlic and Creole seasoning during the last 2 minutes of cooking.
The broccoli in this had a wonderful texture. The seasoning mix had just enough heat and flavor to make this really stand out from a plain broccoli side dish. This is something I will be happily making again.
