Skinny Omelette

I found this recipe on Pinterest and thought it was a fun twist on an omelette. With fresh ingredients in the center and only a little bit of cheese, this omelette is a lot lighter than typical omelettes which are loaded with cheese and veggies which have been sauteed in oil.

Ingredients (per omelette):
-2 eggs
-1/2 t basil paste
-1/2 oz feta cheese
-1/4 c chopped spinach
Beat the eggs in a bowl and add a pinch of salt. Cook the eggs in a medium to large frying pan for just a minute or two. My eggs were just thick enough so I could flip it without destroying it.
Remove eggs from pan and spread a thin swatch of basil paste down the center of the eggs. Fill with spinach and feta, roll, cut in half, and serve.
If making more than one omelette, place the egg on parchment paper and conveniently fill all at once.
Dave and I both really enjoyed this omelette as a light lunch. The spinach added great color to the dish and the saltiness of the feta cheese contrasted nicely. I was very happy with how this turned out and I'm looking forward to the 1,000th post in 50 more days.
