Buffalo "Wing" Style Cauliflower

                                   

I've mentioned before that I work in a restaurant and we serve a lot of boneless wings. I may not eat boneless wings, but I love buffalo sauce and blue cheese. Both pair great with celery or with french fries so when I saw this recipe for vegetarian style boneless wings I had to try it. This recipe is perfect for vegetarians who have a buffalo sauce craving and for non-vegetarians who are looking for healthy tailgating options because boneless wings might be great, but they're not healthy and after enough rounds of wings that will have an effect. Ingredients
-1 head cauliflower, cleaned and cut into bite-sized pieces
-1 cup buttermilk
-1 cup all-purpose flour
-2 teaspoons garlic salt
-1 cup buffalo sauce
-1 tablespoon unsalted butter, melted

This recipe makes a lot! I cut the recipe in half and still had enough on my plate that I needed to eat this for leftovers the next day (trust me, that was not a problem).

Preheat the oven to 450.

Mix together the buttermilk, flour and garlic salt.

Cut up bite sized pieces of cauliflower.
Coat in the cauliflower in the flour mixture. 
Spread in a single layer on a lined baking sheet. You may want to spray the baking sheet in non-stick spray. 
Cauliflower with coating. 
Bake for 15-18 minutes. 
Toss in buffalo sauce and melted butter.
Bake for 6-8 more minutes. 
Serve with celery and blue cheese.  
Delicious! 
This was so good I not only happily ate the leftovers, but I bought another head of cauliflower so that I can make this again. This recipe is perfect for any meal and these "wings" looked no different than the boneless wings that I carry out of the kitchen on a daily basis. This recipe is one of the best recipes that I've made for this blog, everyone should try this out!
